Kässpätzle

A Swabian classic full of cheese.

Ingredients

Spaetzle

275 g
White flour, wheat
2
Eggs
3 tbsp
Neutral oil (e.g. peanut)
1 tsp
Salt
250 mL
Milk
Nutmeg
Pepper

Cheese

150 g
Gruyère, grated
150 g
Emmental cheese, grated

Garnitur

3-4
Onion, medium size
Butter

Baking:

15 min at 220 °C Top/bottom heat

Instructions

Spaetzle

  1. Den Ofen auf 200 Grad vorheizen.
  2. Whisk the eggs with the milk. Then add the salt, flour and oil and mix to form a dough. Check the consistency and add more flour if necessary. Season with nutmeg and pepper.
  3. Bring a pan of salted water to the boil.
  4. Scrape the spaetzle dough into the water in several batches on a wet wooden board. Wait until the spaetzle rises, skim off.

Compilation

  1. Meanwhile, caramelise the onion half rings in butter over a medium heat. Stir constantly.
  2. Place the spaetzle and cheese in alternating layers in a baking tin.
  3. When all the spaetzle have been cooked, leave the baking tin in the oven for 15 minutes until the cheese has melted.
