Spaetzle

Great as a side dish or refined with cheese or wild garlic

Portions:

4 as a side dish, half as a main course

Ingredients

275 g
White flour, wheat
2
Eggs
3 tbsp
Neutral oil (e.g. peanut)
1 tsp
Salt
250 mL
Milk
Nutmeg
Pepper

Instructions

  1. Whisk the eggs with the milk. Then add the salt, flour and oil and mix to form a dough. Check the consistency and add more flour if necessary. Season with nutmeg and pepper.
  2. Bring a pan of salted water to the boil.
  3. Scrape the spaetzle dough into the water in several batches on a wet wooden board. Wait until the spaetzle rises, skim off.
