Sourdough starter

Actually quite easy to keep alive. Growing sourdough can be more problematic than you might think. The easiest way to start is to borrow some from friends or a good baker.

Sourdough starter, rye
50 g
Water, lukewarm
50 g
Rye meal

Instructions

Refresh Feeding

  1. To refresh, reduce the existing sourdough mixture to a smaller quantity (here: 50 g). Add equal amounts of lukewarm water and rye meal and mix well.
  2. Leave to ferment overnight.
  3. Either use directly or store in the fridge for up to 1.5 weeks before the sourdough batch needs to be refreshed so that the yeasts don't die. (Rye makes the whole thing quite stable, my batch still bounced back after 2.5 weeks)
