Ingredients

Austrian Crêpes (Palatschinken)

90 g
White flour, wheat
9/10
Eggs
~225 mL
Milk
Salt
Butter
Neutral oil (e.g., peanut)
Icing sugar

Filling

100 g
Grey poppy seeds, ground
75 g
Sugar
50 g
Water
1/2
Juice of one lemon

Instructions

Austrian Crêpes (Palatschinken)

  1. Whisk the flour with the milk to form a smooth batter.
  2. Add a pinch of salt and stir in the eggs.
  3. Leave to rest for 1⁄2 hour.
  4. Heat a pan, melt a little butter with a little neutral oil.
  5. Remove the excess fat with kitchen paper and spread a thin layer of batter in the pan.
  6. Fry the pancakes until golden brown.
  7. Spread a thin layer of apricot jam on the pancakes and roll them up.
  8. Dust with icing sugar when there is enough and serve.

Filling

  1. Start with the batter for the pancakes and leave to rest.
