- Preheat the oven to 170°C fan oven.
- Beat the egg yolks with the sugar and a pinch of salt in a food processor for 5-10 minutes.
- Then beat the egg whites with the second part of the sugar and a pinch of salt in a food processor for about 5 minutes until stiff.
- In the meantime, add the starch to the flour and sieve both together onto baking paper
- Then carefully fold about a third of the egg whites into the egg yolk mixture
- Only then carefully fold the remaining egg whites into the egg yolk mixture using a spatula.
- Finally, gently fold the sieved flour into the mixture.
- Place the mixture in a piping bag with a 12 mm nozzle and pipe even strips of approx. 10 cm onto a baking tray lined with baking paper
- Then sprinkle the ladyfingers generously with granulated sugar.
- Bake the tray in the oven for approx. 15 minutes until golden brown.
Instead of sponge fingers, you can also use the same mixture to pipe cake bases. Great for a Malakoff cake, for example.
