Better than from the supermarket, ideal for tiramisu or malakoff cake.

Egg yolk mixture

150 g
Egg yolk (~9 eggs)
60 g

Egg white mass

100 g
Egg white (~4 eggs)
60 g
Sugar
1 pinch
Salt

The rest

75 g
White flour, wheat
75 g
Starch

Baking:

15 min at 170 °C fan on

Instructions

  1. Preheat the oven to 170°C fan oven.
  2. Beat the egg yolks with the sugar and a pinch of salt in a food processor for 5-10 minutes.
  3. Then beat the egg whites with the second part of the sugar and a pinch of salt in a food processor for about 5 minutes until stiff.
  4. In the meantime, add the starch to the flour and sieve both together onto baking paper
  5. Then carefully fold about a third of the egg whites into the egg yolk mixture
  6. Only then carefully fold the remaining egg whites into the egg yolk mixture using a spatula.
  7. Finally, gently fold the sieved flour into the mixture.
  8. Place the mixture in a piping bag with a 12 mm nozzle and pipe even strips of approx. 10 cm onto a baking tray lined with baking paper
  9. Then sprinkle the ladyfingers generously with granulated sugar.
  10. Bake the tray in the oven for approx. 15 minutes until golden brown.
Instead of sponge fingers, you can also use the same mixture to pipe cake bases. Great for a Malakoff cake, for example.
