Ingredients

150 g
White flour, wheat
3
Egg yolks
3
Egg whites
30 g
Sugar
Salt
Milk, as required
Fat (butter or animal fat very good)
Raisins (optional)
Icing sugar

Instructions

  1. Whisk the egg yolks with the flour, sugar, salt and the required amount of milk to form a thick batter.
  2. Beat the egg whites until stiff and fold in.
  3. Optional: Add half of the sultanas to the dough.
  4. Heat plenty of fat in a frying pan and pour in the pancake batter to the thickness of a finger.
  5. Optional: Spread the remaining sultanas evenly in the unbaked dough.
  6. Bake until brown on both sides. Do not bake until the dough is completely cooked, but turn earlier. Turning requires some skill and at least two spatulas.
  7. Before the Kaiserschmarrn is fully cooked, tear it into small pieces with two forks and then let it roast briefly.
  8. Serve sprinkled with icing sugar and apple compote or apple sauce on the side.
