- Whisk the egg yolks with the flour, sugar, salt and the required amount of milk to form a thick batter.
- Beat the egg whites until stiff and fold in.
- Optional: Add half of the sultanas to the dough.
- Heat plenty of fat in a frying pan and pour in the pancake batter to the thickness of a finger.
- Optional: Spread the remaining sultanas evenly in the unbaked dough.
- Bake until brown on both sides. Do not bake until the dough is completely cooked, but turn earlier. Turning requires some skill and at least two spatulas.
- Before the Kaiserschmarrn is fully cooked, tear it into small pieces with two forks and then let it roast briefly.
- Serve sprinkled with icing sugar and apple compote or apple sauce on the side.
