1 egg weight
Butter, soft
2 egg weight
Durum wheat semolina
1 pinch
Salt
1 pinch
Nutmeg, ground

Instructions

  1. Crack and weigh the egg. Prepare the semolina and butter accordingly.
  2. Beat the soft butter until fluffy.
  3. Add the egg, a pinch of salt and beat until homogeneous.
  4. Add the semolina and nutmeg and mix until the mixture is homogeneous again.
  5. Bring the water to the boil in a wide pan. Salt heavily.
  6. Using a spoon and the heel of your hand, grind the semolina in tablespoon-sized portions into the familiar shape. Add to the water.
  7. Allow the dumplings to simmer gently for about 10 minutes.
  8. Add cold water to the pan and leave to infuse for a further 15 minutes.
  9. Meanwhile, warm up the soup and chop the chives.
  10. Serve the dumplings in the soup with chives on top.
