Durum wheat semolina

- Crack and weigh the egg. Prepare the semolina and butter accordingly.
- Beat the soft butter until fluffy.
- Add the egg, a pinch of salt and beat until homogeneous.
- Add the semolina and nutmeg and mix until the mixture is homogeneous again.
- Bring the water to the boil in a wide pan. Salt heavily.
- Using a spoon and the heel of your hand, grind the semolina in tablespoon-sized portions into the familiar shape. Add to the water.
- Allow the dumplings to simmer gently for about 10 minutes.
- Add cold water to the pan and leave to infuse for a further 15 minutes.
- Meanwhile, warm up the soup and chop the chives.
- Serve the dumplings in the soup with chives on top.
