Apricot & plum dumplings

Ingredients

Dough

125 g
Quark (full fat)
250 g
White flour, wheat

Egg
Salt
Milk, as required

Apricots or plums (small-medium sized)

Breadcrumbs

Instructions

  1. Knead or quark with flour, salt, eggs and as much warm milk as necessary to form a smooth, firm dough. It is best to knead by hand (the dough is too dry for the machine), the milk should be kept to a minimum and no more than 10 mL should be needed.
  2. Shape the dough into a roll and cut into ~15 pieces.
  3. Wash the apricots or plums, remove the stones and put 1 sugar cube in place of the stone.
  4. Wrap each apricot or plum completely in a piece of pastry.
  5. Place the prepared dumplings in boiling salted water and cook slowly for approx. 15 minutes. Stir carefully with a wooden spoon while cooking, otherwise the dumplings will stick to the bottom.
  6. Toast the breadcrumbs in the melted butter until light brown.
  7. Pour the breadcrumbs onto the dumplings and sprinkle with icing sugar as required.
