Swiss elbow macaroni with minced beef
Unorthodox with cream but a classic from the Gempen childhood.

Cream

Starch
1/2 tsp
Sweet paprika
1 pinch
Paprika, smoked
100 mL

Elbow macaroni
Butter
Oil
Salt

- Fry the mince in oil until golden brown. Season with salt and pepper. Move to the edge of the pan.
- Finely chop the onion and fry in butter until brown.
- Meanwhile, cook the elbow macaroni.
- Add the cream a little at a time. Mix some of the cream with the starch and add if you want a thicker sauce. Season with paprika and bring to the boil. Add the stock to thin it down a little.
- Strain the elbow macaroni when ready and mix in.
- Serve with plenty of grated Parmesan cheese and some applesauce.
