Spaghetti Carbonara

Surprisingly simple, even without cream

Spaghetti, dry weight

Grana Padano

Parmesan

Bacon cubes
Pepper
Salt

Instructions

  1. Cook the spaghetti in heavily salted water until al dente.
  2. Meanwhile, cut the bacon into cubes and fry in a pan over a low heat until crispy.
  3. Mix the eggs with the grated cheese in a bowl. Season well with pepper.
  4. After cooking for at least 5 minutes, you can add approx. 5-6 tbsp of pasta water to the egg and cheese mixture. Add the pasta water bit by bit and stir in.
  5. When the pasta is al dente, strain it. Switch off the hob and mix the pasta with the egg and cheese mixture on the residual heat of the hob, stirring constantly.
  6. Add the diced bacon.
  7. Serve with a little more grated cheese.
