Pankcakes

The American breakfast classic

8 pancakes with a diameter of approx. 10 cm

Ingredients

20 g
Butter, melted
200 g
White flour, wheat
2 tbsp
Sugar
8 g
Vanilla sugar
2 tsp
Baking powder
1/4 tsp
Salt
300 mL
Buttermilk (alternatively: milk)
1
Egg

Instructions

  1. Melt the butter in a small pan and leave to cool slightly.
  2. Mix all the dry ingredients (i.e. flour to salt) in a bowl.
  3. Whisk the egg with the buttermilk and a little cooled melted butter.
  4. Add the liquid to the dry ingredients and mix carefully. Small lumps are okay, even desirable.
  5. Fry in a pan with a little oil or frying butter. As soon as they have risen well and the batter is a little firmer, turn them over and finish frying.
  6. It is best to keep the oven at 50 °C until all the pancakes are baked.
  7. Serve with maple syrup, butter or whipped cream and fruit.
