The Italian version of a sourdough. It has a much softer flavour than its German counterpart.

Water, lukewarm

Semi-white flour, wheat
Instructions
Refresh
- Refresh in the same way as for sourdough. So mix all the ingredients together.
- Leave to ferment overnight and either use immediately or keep in the fridge for up to a week before the Levito Madre needs to be refreshed.
