Levito Madre

The Italian version of a sourdough. It has a much softer flavour than its German counterpart.

Levito Madre
30 g
Water, lukewarm
50 g
Semi-white flour, wheat

Instructions

Refresh

  1. Refresh in the same way as for sourdough. So mix all the ingredients together.
  2. Leave to ferment overnight and either use immediately or keep in the fridge for up to a week before the Levito Madre needs to be refreshed.
