Cheese ravioli

Intense cheese flavour in ravioli form

Parmesan was too dominant. Added extra Grano Padano to the recipe and reduced the amount of Parmesan slightly. TODO: better picture

Ingredients

Dough

280 g
White flour, wheat
3
Eggs
1 pinch
Salt

Filling

250 g
Ricotta
80 g
Parmesan
50 g
Grana Padano
50 g
Pecorino Romano
Pepper

To serve

50 g
Butter
Grated cheese (of your choice)

Instructions

  1. Knead the ingredients for the dough into a firm but smooth dough. Add more flour if necessary.
  2. Wrap the dough in cling film and leave to relax for at least 30 minutes.
  3. Meanwhile, you can prepare the filling. Grate all the cheeses and mix with the ricotta. Season well with finely ground pepper.
  4. When the dough is relaxed, roll it out thinly. (setting 6 in the pasta machine)
  5. Cut out approx. 9 cm dough pieces and portion 20 g of filling onto every second one.
  6. Moisten the edge with a little water and close. Take care not to trap any air.
  7. Place in boiling, salted water for 4 minutes.
  8. Serve with melted butter and optionally some more grated cheese of your choice on top.
