Caramels

These "Rahmtäfeli" are as much a part of Switzerland as the mountains.

Ingredients

250 mL
Cream
250 g
Sugar
1 tsp
Vanilla sugar
1 pinch
Salt
20 g
Butter

Instructions

  1. In a wide pan (no, not a pot), mix all the ingredients except the butter and allow to warm.
  2. Bring to the boil over a medium-high heat, stirring constantly, and allow to caramelize slowly. The whole thing goes quite slowly at the beginning but very quickly towards the end, be careful.
  3. Then remove from the heat and stir in the butter until homogeneous.
  4. Pour out onto an inverted baking tray (protected with baking paper) and flatten to approx. 1 cm thick using a second baking sheet (and baking paper).
  5. Leave to cool for approx. 10-15 minutes and then cut into bite-sized rectangles with a knife.
