Cookies ❄️ Caramels
These "Rahmtäfeli" are as much a part of Switzerland as the mountains.

Ingredients
250 mL
Cream
250 g
Sugar
1 tsp
Vanilla sugar
1 pinch
Salt
20 g
Butter
Instructions
- In a wide pan (no, not a pot), mix all the ingredients except the butter and allow to warm.
- Bring to the boil over a medium-high heat, stirring constantly, and allow to caramelize slowly. The whole thing goes quite slowly at the beginning but very quickly towards the end, be careful.
- Then remove from the heat and stir in the butter until homogeneous.
- Pour out onto an inverted baking tray (protected with baking paper) and flatten to approx. 1 cm thick using a second baking sheet (and baking paper).
- Leave to cool for approx. 10-15 minutes and then cut into bite-sized rectangles with a knife.
