Biryani Masala

The spice base for the Indian classic.

Cinnamon roll (~ 6cm) (cassia cinnamon preferred, Ceylon also good)

Cardamom pods, green

Bay leaves
2 tbsp
Cumin
1 tsp
Fenugreek
1 tbsp
Fennel seeds

Cardamom pods, black (alternatively: 5 more green pods)

red chillis, dried. (alternatively: 1 tbsp Kashmiri chilli)
2 tbsp
Coriander seeds
1/4 tsp
Nutmeg

Instructions

  1. Lightly crush the cardamom pods and roast all the spices that are not in powder form in a pan over a medium heat. Take care not to burn the spices. Stop as soon as the spices smell aromatic.
  2. Grind the herbs to a fine powder in a mortar or coffee grinder.
  3. Add the missing powdered spices (usually just the nutmeg). Best used soon, but can also be made in advance and used over the next 3 months.
