White flour, wheat

Eggs

Milk
Salt
Butter
Neutral oil (e.g., peanut)
Icing sugar
Preparation:

- Whisk the flour with the milk to form a smooth batter.
- Add a pinch of salt and stir in the eggs.
- Leave to rest for 1⁄2 hour.
- Heat a pan, melt a little butter with a little neutral oil.
- Remove the excess fat with kitchen paper and spread a thin layer of batter in the pan.
- Fry the pancakes until golden brown.
- Spread a thin layer of apricot jam on the pancakes and roll them up.
- Dust with icing sugar when there is enough and serve.
Cinnamon & sugar or other jams can be used instead of apricot jam. For larger quantities, it is worth keeping the finished pancakes warm in the oven on a low heat.
