Aglio e Olio

A quick and simple pasta recipe with lots of flavour

Ingredients

160 g
Spaghetti, dry weight
1
Thai Chilli
3
Garlic cloves
4-5 twigs
Parsley, fresh
5-6 tbsp
Olive oil

Instructions

  1. Boil a little water for spaghetti and cook spaghetti 1-2 minutes before al-dente.
  2. Meanwhile, sauté the parsley stems, a crushed clove of garlic and a few strips of chilli in the olive oil.
  3. Finely chop the remaining chilli, parsley and the last clove of garlic.
  4. Remove the fried pieces from the oil.
  5. Add 5-8 tbsp pasta water to the olive oil and boil down.
  6. Add the finely chopped ingredients just before the spaghetti is ready.
  7. When the spaghetti is cooked 1-2 minutes before al-dente, add it to the oil and add more starch water if necessary.
  8. Serve with optional grated parmesan.
