Ingredients

Spaghetti, dry weight

Thai Chilli

Garlic cloves
4-5 twigs
Parsley, fresh
5-6 tbsp
Olive oil

- Boil a little water for spaghetti and cook spaghetti 1-2 minutes before al-dente.
- Meanwhile, sauté the parsley stems, a crushed clove of garlic and a few strips of chilli in the olive oil.
- Finely chop the remaining chilli, parsley and the last clove of garlic.
- Remove the fried pieces from the oil.
- Add 5-8 tbsp pasta water to the olive oil and boil down.
- Add the finely chopped ingredients just before the spaghetti is ready.
- When the spaghetti is cooked 1-2 minutes before al-dente, add it to the oil and add more starch water if necessary.
- Serve with optional grated parmesan.
