Winter vegetable strudel

Earthy winter flavour in strudel form.

Instructions

  1. Firstly, prepare a strudel dough and leave to rest.
  2. Meanwhile, peel the vegetables and slice 2-3 mm thick. Sauté all the vegetables except the potatoes in a little stock. For a particularly nice strudel, keep the vegetables separate so that you can create layers in the strudel afterwards.
  3. Preheat the oven to 180°C top/bottom heat.
  4. Grate the Gruyère cheese.
  5. Stretch out the strudel dough on a lightly floured kitchen towel. Cover with ham and then sprinkle with the cheese. Then add the vegetables in layers.
  6. Use the cloth to roll up the strudel and place on a baking tray.
  7. Melt the butter and brush the strudel with it.
  8. Bake in the oven for 40 minutes.
