White wine vinegar

Sugar

- Cut the cucumber into thin slices using a vegetable slicer.
- Place the cucumbers in a sieve and season with salt. Weigh down the whole thing with a weight. (Hence the name). Leave to drain for approx. 30 minutes.
- Boil the water with the sugar and vinegar until the sugar has dissolved.
- Leave to cool and add the chopped dill.
- Remove the weight from the cucumbers and squeeze out more water by hand.
- Place the cucumbers in a bowl and mix well with the liquid.
- Store in the fridge for at least 3 hours.
