Caroline's blend to try: (3 tsp Ceylon cinnamon, 1/2 tsp ground cloves, 1/2 tsp ground cardamom, 1/4 tsp ground ginger powder and 1/4 tsp ground allspice

Instructions

Optionally, lightly toast the whole spices (coriander and pepper) in a pan.
Grind finely in a spice mill.
Use within 3 months (e.g. for speculoos)
