- If you don’t have any boiled potatoes left over from the day before: boil the potatoes for about 30 minutes and leave them to cool. It is important that the potatoes are cool before grating them.
- Coarsely grate the potatoes using a grater.
- Finely chop the onions.
- Mix the potatoes and onion in a bowl. Season generously with pepper, salt and nutmeg.
- Melt the butter in a large frying pan and add the potato and onion mixture. Heat through over a high heat, stirring constantly.
- Once it’s hot enough, make some space in the middle of the pan and add a little butter. Then shape a rösti on top.
- Place flakes of butter around the edge of the rösti so that they can melt into it.
- Reduce the heat to low to medium.
- When golden brown (this may take 10–15 minutes), turn it over using a plate
- Once the rösti is ready, fry the eggs in the same pan to make fried eggs. A runny yolk goes very well with the potatoes.
- Serve the eggs on top of the rösti.
