Instructions

  1. If no cooked potatoes are available from the previous day: Boil the potatoes for approx. 30 minutes and leave to cool. It is important that the potatoes are cool before grating.
  2. Coarsely grate the potatoes.
  3. Finely chop the onions.
  4. Mix the potatoes and onion in a bowl. Season with plenty of pepper, salt and nutmeg.
  5. Heat the butter in a large pan and add the potato and onion mixture. Heat over a high heat, stirring continuously.
  6. Once hot enough, place in the centre of the pan and add a little butter. Then mould a rösti on top.
  7. Add butter flakes around the edge of the rösti so that they can melt into the rösti.
  8. Reduce the heat to low to medium.
  9. When golden brown (this may take 10-15 minutes) turn over with the help of a plate
  10. When the rösti is ready, fry the eggs in the same pan to make fried eggs. A runny yolk complements the potatoes very well.
  11. Serve the eggs on the rösti.
