Instructions

  1. If you don’t have any boiled potatoes left over from the day before: boil the potatoes for about 30 minutes and leave them to cool. It is important that the potatoes are cool before grating them.
  2. Coarsely grate the potatoes using a grater.
  3. Finely chop the onions.
  4. Mix the potatoes and onion in a bowl. Season generously with pepper, salt and nutmeg.
  5. Melt the butter in a large frying pan and add the potato and onion mixture. Heat through over a high heat, stirring constantly.
  6. Once it’s hot enough, make some space in the middle of the pan and add a little butter. Then shape a rösti on top.
  7. Place flakes of butter around the edge of the rösti so that they can melt into it.
  8. Reduce the heat to low to medium.
  9. When golden brown (this may take 10–15 minutes), turn it over using a plate
  10. Once the rösti is ready, fry the eggs in the same pan to make fried eggs. A runny yolk goes very well with the potatoes.
  11. Serve the eggs on top of the rösti.
