- If no cooked potatoes are available from the previous day: Boil the potatoes for approx. 30 minutes and leave to cool. It is important that the potatoes are cool before grating.
- Coarsely grate the potatoes.
- Finely chop the onions.
- Mix the potatoes and onion in a bowl. Season with plenty of pepper, salt and nutmeg.
- Heat the butter in a large pan and add the potato and onion mixture. Heat over a high heat, stirring continuously.
- Once hot enough, place in the centre of the pan and add a little butter. Then mould a rösti on top.
- Add butter flakes around the edge of the rösti so that they can melt into the rösti.
- Reduce the heat to low to medium.
- When golden brown (this may take 10-15 minutes) turn over with the help of a plate
- When the rösti is ready, fry the eggs in the same pan to make fried eggs. A runny yolk complements the potatoes very well.
- Serve the eggs on the rösti.
