Power broth
A perfectly clear and strong soup. It is usually served in cups without any other additions, but is also very suitable as a base for frittaten soup.

- Cook the bone broth the day before and chill.
- Optional: Degrease by skimming off the resulting layer of fat
- Cut the beef into small pieces, mix well with 1⁄4 litre of soup and the egg white and pour in the remaining soup
- Beat vigorously with a whisk until boiling
- Allow to cook gently for a further 2 hours.
- Strain through a cloth. (A very fine metal sieve is of course also possible if available)
The meat residues are still used as a filling for meat strudels and similar dishes.
