Power broth

A perfectly clear and strong soup. It is usually served in cups without any other additions, but is also very suitable as a base for frittaten soup.

1 litre soup

250 g
lean beef
2
Egg whites

Instructions

  1. Cook the bone broth the day before and chill.
  2. Optional: Degrease by skimming off the resulting layer of fat
  3. Cut the beef into small pieces, mix well with 1⁄4 litre of soup and the egg white and pour in the remaining soup
  4. Beat vigorously with a whisk until boiling
  5. Allow to cook gently for a further 2 hours.
  6. Strain through a cloth. (A very fine metal sieve is of course also possible if available)

The meat residues are still used as a filling for meat strudels and similar dishes.
