On the Plate:

- Peel the parsley root and cut into ~1cm pieces. Peel and finely chop the onion.
- Melt some butter in a pan and sauté the parsley root and onion.
- Deglaze with white wine.
- Pour in the milk and simmer for 20 minutes until soft with the lid on.
- Puree and add the butter in pieces.
- Season with salt and pepper.
