Parsley root purée

Ideal with a piece of beef with red wine sauce

Ingredients

500 g
Parsley root
1
Onion, large
1 tbsp
Butter
70 mL
White wine
300 mL
Milk
30 g
Butter
1/2 tsp
Pepper, white
1/2 tsp
Salt

On the Plate:

Instructions

  1. Peel the parsley root and cut into ~1cm pieces. Peel and finely chop the onion.
  2. Melt some butter in a pan and sauté the parsley root and onion.
  3. Deglaze with white wine.
  4. Pour in the milk and simmer for 20 minutes until soft with the lid on.
  5. Puree and add the butter in pieces.
  6. Season with salt and pepper.
