Mum's cherry sheet cake

A simple pound cake recipe with cherries

Instructions

  1. Separate the eggs. Beat the butter with the sugar and vanilla sugar. Gradually add the yolks and lemon juice.
  2. Wash and pit the cherries.
  3. Beat the egg whites until stiff.
  4. Fold a third of the egg white and flour into the butter mixture.
  5. Sift the baking powder into the rest of the flour.
  6. Fold in the rest of the flour and egg whites until the mixture is homogeneous. Do not overmix.
  7. Spread the mixture evenly on a baking tray and sprinkle with the pitted cherries.
  8. Bake at 180 degrees for 30-35 minutes until golden-brown. Leave to cool for at least 15 minutes.
