Sauce 🍂

Morel sauce

Great with pasta, a cutlet or rösti.

Ingredients

Shallots, medium size
1 tbsp
Butter
40 g
Morels, dried (alternatively: 100 g fresh)
100 mL
White wine
100 mL
200 mL
Cream
1 tsp
Starch
Pepper
Salt

Instructions

  1. Soak the morels in water for a few minutes.
  2. Meanwhile, finely chop the shallots and sauté in a little butter.
  3. Wash the morels and cut them in half. Add to the onions.
  4. Sauté for a few minutes, then add the white wine and reduce.
  5. When the wine has almost completely boiled down, add the beef stock and reduce by about half.
  6. Then add the cream and starch (it is best to dissolve the starch in a little water first to avoid lumps) and bring to the boil.
  7. Season to taste with salt and pepper and serve with pork chops, spaetzle or noodles.
