Morel sauce

Ingredients

Shallots, medium size
1 tbsp
Butter
40 g
Morels, dried (alternatively: 100 g fresh)
100 mL
White wine
100 mL
200 mL
Cream
1 tsp
Starch
Pepper
Salt
Instructions
- Soak the morels in water for a few minutes.
- Meanwhile, finely chop the shallots and sauté in a little butter.
- Wash the morels and cut them in half. Add to the onions.
- Sauté for a few minutes, then add the white wine and reduce.
- When the wine has almost completely boiled down, add the beef stock and reduce by about half.
- Then add the cream and starch (it is best to dissolve the starch in a little water first to avoid lumps) and bring to the boil.
- Season to taste with salt and pepper and serve with pork chops, spaetzle or noodles.
