Garam Masala
One of the more important Indian spice mixtures, good for many things. The picture shown here is not fully representative of the spice quantities. For example, a whole cinnamon stick or nutmeg would probably be far too much.

Star anise

Cassia cinnamon, ground (Ceylon is also good)

Mace, alternatively: nutmeg

Instructions
- Heat a pan on a high heat
- Add everything except the nutmeg (i.e. everything that is whole) to the pan in the order shown on the left and roast. (Heaviest spices first, lighter ones later)
- Open the black cardamom pods and remove the peel. Allow the spices to cool completely and grind finely in a coffee grinder or mortar.
- If parts are still coarse, separate them through a sieve and grind them again separately.
- Keeps in an airtight container for approx. 3 months. The fresher the better, of course.
