Garam Masala

One of the more important Indian spice mixtures, good for many things. The picture shown here is not fully representative of the spice quantities. For example, a whole cinnamon stick or nutmeg would probably be far too much.

Star anise

Cassia cinnamon, ground (Ceylon is also good)

Cardamom pods, green
1/2 tsp
Pepper, whole

black cardamom pods

Cloves, whole (~0.5 tbsp)
1 tsp
Mace, alternatively: nutmeg
11/2 tbsp
Coriander, whole
1 tbsp
Cumin
1 tsp
Nutmeg, ground
3-4
Bay leaves, dried

Instructions

  1. Heat a pan on a high heat
  2. Add everything except the nutmeg (i.e. everything that is whole) to the pan in the order shown on the left and roast. (Heaviest spices first, lighter ones later)
  3. Open the black cardamom pods and remove the peel. Allow the spices to cool completely and grind finely in a coffee grinder or mortar.
  4. If parts are still coarse, separate them through a sieve and grind them again separately.
  5. Keeps in an airtight container for approx. 3 months. The fresher the better, of course.
