- Cut the lemons into thin slices. Roughly clean the elderflowers. Do not wash, as this loses the flavour. Pay particular attention to insects and shake off or remove them.
- Place the flowers and lemons in a container, cover in layers with sugar and citric acid. Add water on top.
- Optional: Add the lemon balm or mint here.
- Leave to infuse for a day or overnight.
- It is best to place the flowers and lemons in a filter and allow to drain. As the sugar is not yet completely dissolved, it is best to simply skim it off from the top.
- Now bring the syrup to the boil once and filter through a fine sieve.
- Meanwhile, boil glass bottles for sterilisation.
- Now fill into the bottles. Consume in ~1 year.
