Crumble quark ("Bröseltopfen")
Crumble quark is nothing more than lean, dry quark. You can therefore have a similar curd cheese with drained low-fat quark. As the name Bröseltopfen suggests, you want a slightly crumbly consistency in the quark.

- Place the low-fat quark in a fine-mesh (and clean) tea towel.
- Gather the ends of the crockery together and wring out the low-fat quark by rotating the tips.
- As the low-fat quark dehydrates, especially at the edges, mix the whole thing from time to time by pressing and squeezing. Alternatively, you can leave the mixture to rest in the fridge to homogenise the moisture.
- Once the desired crumbliness has been achieved (compare with the picture above), the whole thing can be used for typical Carinthian recipes. The mass reduction of approx. 65% is a good starting point.
