Coleslaw

A classic from the south of the USA. Ideal as a side dish with meat.

Ingredients

Kale, medium

Buttermilk
5 tbsp
Apple cider vinegar

Juice of one lemon
5 tbsp
Olive oil
1 tbsp
Sugar

Spices

Salt
1/2 tsp
Onion powder
1/2 tsp
Garlic powder
1/2 tsp
Mustard seeds, ground
1 tsp
Pepper, ground
1/2 tsp
Celery seeds (optional)

Instructions

  1. Halve the kale and cut out the stem. Slice finely with a vegetable slicer.
  2. Peel and finely grate the carrots. Add to the cabbage in a large bowl.
  3. Make the mayonnaise, stir in the buttermilk, apple cider vinegar, lemon juice, olive oil and sugar until homogeneous.
  4. Add the spices to the dressing, mix and pour over the carrots and cabbage. Mix and flavour. Add more vinegar if necessary.
  5. Leave to infuse in the fridge for at least 1 hour. Serve.
