Preparation:

- Halve the kale and cut out the stem. Slice finely with a vegetable slicer.
- Peel and finely grate the carrots. Add to the cabbage in a large bowl.
- Make the mayonnaise, stir in the buttermilk, apple cider vinegar, lemon juice, olive oil and sugar until homogeneous.
- Add the spices to the dressing, mix and pour over the carrots and cabbage. Mix and flavour. Add more vinegar if necessary.
- Leave to infuse in the fridge for at least 1 hour. Serve.
