Speculoos

North German Christmas biscuits with lots of flavour.

Ingredients

Eggs
250 g
Butter, soft
250 g
brown sugar
500 g
White flour, wheat
1 pinch
Salt
8 g
Vanilla sugar
4 g
Baking powder
4 tbsp

Instructions

  1. Beat the butter, sugar and egg with the whisk on a hand mixer for at least 10 minutes until fluffy. Stir in the spices, lemon zest and ground almonds. Mix the flour, baking powder and salt and stir in. Shape the dough into a ball with your hands, wrap in cling film and chill for approx. 1 hour.
  2. Shape the dough into small balls and press them into the floured moulds. Cut off any leftover dough with a sharp knife or thin wire. Carefully but firmly knock the speculoos out of the mould.
  3. Place the speculoos on baking trays lined with baking paper and chill for approx. 2 hours.
  4. Bake the trays one after the other in the preheated oven (top/bottom heat: 200 °C/convection: 175 °C) for 10-12 minutes. Remove the speculoos and leave to cool on a cake rack.
