- Preheat the oven to 200°C top/bottom heat.
- Cut off the top of the garlic head, season with salt and pepper and drizzle with olive oil. Bake for 35 minutes.
- Cook the red lentils in water for approx. 1⁄4 hour. (First bring to the boil at full heat, then simmer for the remaining time with the lid on).
- Mix all the ingredients together in a blender to form a homogeneous mixture. Flavour with salt.
- Serve well with fresh coriander.
