Red lentil spread

A hummus-like spread made from red lentils.

Ingredients

1 Head
Garlic
170 g
Red lentils, dry
400 mL
Water
1
Juice of one lemon
3 g
Cumin, ground
1/2 tsp
Coriander, ground
1 pinch
Cayenne
2 tbsp
Olive oil
Salt
Pepper

Baking:

35 min at 200 °C Top/bottom heat

Cooking:

15 min

On the Plate:

50 min

Instructions

  1. Preheat the oven to 200°C top/bottom heat.
  2. Cut off the top of the garlic head, season with salt and pepper and drizzle with olive oil. Bake for 35 minutes.
  3. Cook the red lentils in water for approx. 1⁄4 hour. (First bring to the boil at full heat, then simmer for the remaining time with the lid on).
  4. Mix all the ingredients together in a blender to form a homogeneous mixture. Flavour with salt.
  5. Serve well with fresh coriander.
