Potato puree

Potato puree is surprisingly much better when infused with a little rosemary in the milk. The whole thing with a gravy or a fast red wine sauce makes the whole thing irresistibly good.

Adjust Amount:

Ingredients

1 kg
Potatoes, starchy
400 mL
Milk
4 Leaf
Sage, fresh (optional)
4 twigs
Thyme, fresh (optional)
2 twigs
Rosemary, fresh (optional)
100 g
Butter
Nutmeg (optional)
Pepper, white
Salt

Instructions

  1. Steam the potatoes for approx. 40 minutes or until cooked. Alternatively, simply simmer in salted water for the same amount of time.
  2. Meanwhile, heat the milk in a saucepan. Hot milk is very important when mashing the potatoes and milk together, do not skip it.
  3. Optional: You can also add optional herbs to the milk to infuse their flavour into the mashed potato. Rosemary is particularly recommended Leave to infuse for at least 10 minutes.
  4. When the potatoes are cooked, peel and mash them. Now steadily add the hot milk and stir vigorously to form an even mixture.
  5. Now add the butter, cut into small cubes, piece by piece and allow to melt in, stirring constantly. The aim here is to achieve a very smooth texture.
  6. Season with salt and pepper and optionally flavour with nutmeg.
