Butter, soft

Zest of one lemon, grated

- Mix the softened butter with the sugar and a pinch of salt.
- Gradually add the eggs and stir in until the mixture becomes a little lighter in color.
- Grate the lemon zest and add.
- Add the flour and mix until homogeneous. Do not knead.
- Place in cling film and chill in the fridge for at least 2 hours. It is best to flatten the mixture a little beforehand.
- Roll out to approx. 7 mm with a little flour. Cut out and place on a baking sheet.
- Preheat the oven to 200 degrees top/bottom heat.
- Chill for 15 minutes.
- Mix the egg yolk and a tablespoon of cream and brush the biscuits with it.
- Bake for approx. 10 minutes on the middle shelf until golden brown. Leave to cool on a wire rack.
