Milanese Cookies

Ingredients

250 g
Butter, soft
225 g
Sugar
1 pinch
Salt

Eggs

Zest of one lemon, grated
500 g
White flour, wheat

Glasur

Baking:

10 min at 200 °C Ober-/Unterhitze

Instructions

  1. Mix the softened butter with the sugar and a pinch of salt.
  2. Gradually add the eggs and stir in until the mixture becomes a little lighter in color.
  3. Grate the lemon zest and add.
  4. Add the flour and mix until homogeneous. Do not knead.
  5. Place in cling film and chill in the fridge for at least 2 hours. It is best to flatten the mixture a little beforehand.
  6. Roll out to approx. 7 mm with a little flour. Cut out and place on a baking sheet.
  7. Preheat the oven to 200 degrees top/bottom heat.
  8. Chill for 15 minutes.
  9. Mix the egg yolk and a tablespoon of cream and brush the biscuits with it.
  10. Bake for approx. 10 minutes on the middle shelf until golden brown. Leave to cool on a wire rack.
