Lemon sorbet

Ingredients

250 g
Sugar
25 g
Glucose syrup (alternatively: sugar)
350 g
Water
350 g
Lemon juice, freshly squeezed
5 twigs
Basil (optional)
1
Peel of one lemon

Instructions

  1. Bring the sugar, glucose syrup and water to the boil to make icing sugar.
  2. Meanwhile, squeeze the lemons, sieve out the seeds and pulp and add. Remove the pan from the heat.
  3. Optionally, add finely chopped basil here.
  4. Allow to cool to room temperature, then chill in the fridge for approx. 4 hours.
  5. Now freeze in an ice cream maker to make sorbet.
  6. If already semi-solidified, add the grated lemon here.
  7. Leave to cool completely in the freezer.
