Ingredients
250 g
Sugar
25 g
Glucose syrup (alternatively: sugar)
350 g
Water
350 g
Lemon juice, freshly squeezed
5 twigs
Basil (optional)

Peel of one lemon
Instructions
- Bring the sugar, glucose syrup and water to the boil to make icing sugar.
- Meanwhile, squeeze the lemons, sieve out the seeds and pulp and add. Remove the pan from the heat.
- Optionally, add finely chopped basil here.
- Allow to cool to room temperature, then chill in the fridge for approx. 4 hours.
- Now freeze in an ice cream maker to make sorbet.
- If already semi-solidified, add the grated lemon here.
- Leave to cool completely in the freezer.
