French onion soup

A French recipe probably better known outside France than within.

Ingredients

Onion, medium size
6 twigs
Thymian
30 g
Butter
1 tbsp
Flour
100 mL
White wine
800 mL
Bone soup or beef soup.

Bay leaves
60 g
Gruyère
3-4 Discs
Bread, classic would be a white bread
1 tbsp
Porcini mushroom pieces, dried (optional)

Baking:

~15 min at 250 °C Top/bottom heat

Instructions

  1. Halve and peel the onion and cut into thin slices.
  2. If using fresh thyme, pluck it from the sprigs and chop a little more if necessary.
  3. Brown the onion in about half the butter in a pan for about 15 minutes, stirring continuously.
  4. Sieve the flour over the onion.
  5. Deglaze with white wine and add the stock. A hearty beef soup such as homemade bone soup is best.
  6. To deepen the flavour, add pieces of porcini mushroom and bring to the boil. The quantity depends on the quality of the stock. Leave to simmer for 30 minutes.
  7. In the meantime, preheat the oven to 250 °C, slice the bread thinly and fry in a pan with the remaining butter until crispy.
  8. Pour the soup into ceramic dishes, cover with bread and sprinkle with cheese.
  9. Bake in the oven until the cheese is baked.
  10. Serve.
