Corn Chowder

Very refreshing with smoked paprika and lime.

Ingredients

Instructions

  1. Cut the sweetcorn from the cobs and brown in a little oil in a pan for about 10 minutes.
  2. Finely dice the onion and add. Sauté until translucent.
  3. Cut the peppers into small cubes and finely chop the coriander stalks.
  4. Deglaze the pan with approx. 100 ml water and add the paprika and coriander.
  5. Squeeze the garlic cloves, slice the chilli and add.
  6. Wash but do not peel the potatoes and cut into approx. 1 cm cubes.
  7. Add the smoked paprika and mix well. Also add the cream cheese and mix in.
  8. Add the potatoes and vegetable stock and simmer for approx. 15 minutes.
  9. When the potatoes are cooked, puree half the amount in a blender.
  10. Mix everything together and season with salt and pepper.
  11. Serve with fresh coriander and lime.
