Egg whites (approx. 70 g)

Almonds, ground with shell

3-5 min at 240 °C Top/bottom heat

Instructions

  1. Beat the egg whites with a pinch of salt until stiff and mix with the sugar.
  2. Mix the almonds with the cinnamon, cloves and kirsch. Mix with the egg white mixture.
  3. Roll out the almond paste on a little sugar to a thickness of 10 mm and cut out stars. Hexagonal stars are better suited to the mixture than 5-sided stars, as otherwise they will quickly stick to the tips. Place on a baking tray.
  4. Bake at 240°C top/bottom heat for 4 minutes in the centre of the oven. Leave to cool slightly on a wire rack.
  5. Meanwhile, beat the egg whites for the icing until slightly stiff and stir in the icing sugar.
  6. Spread approx. 12 tsp of icing on each star and spread the mixture evenly with a spoon or toothpick.
