- Beat the egg whites with a pinch of salt until stiff and mix with the sugar.
- Mix the almonds with the cinnamon, cloves and kirsch. Mix with the egg white mixture.
- Roll out the almond paste on a little sugar to a thickness of 10 mm and cut out stars. Hexagonal stars are better suited to the mixture than 5-sided stars, as otherwise they will quickly stick to the tips. Place on a baking tray.
- Bake at 240°C top/bottom heat for 4 minutes in the centre of the oven. Leave to cool slightly on a wire rack.
- Meanwhile, beat the egg whites for the icing until slightly stiff and stir in the icing sugar.
- Spread approx. 1⁄2 tsp of icing on each star and spread the mixture evenly with a spoon or toothpick.
