- Whisk the eggs with the milk. Then add the salt, flour and oil and mix to form a dough. Check the consistency and add more flour if necessary. Season with nutmeg and pepper.
- Bring salted water to the boil in a pan. Preheat the oven to 200°C fan.
- Scrape the spaetzle dough into the water in several batches on a wet wooden board. Wait until the spaetzle rises and then rinse in a bowl of cold water.
- Meanwhile, caramelize the onion half rings in butter over a medium heat. Stir constantly.
- Place the rinsed spaetzle and cheese in alternating layers in a baking dish.
- When all the spaetzle have been cooked, bake in the oven for 15 minutes until the cheese has melted.
