Cheese spätzle

Ingredients

Spaetzle

275 g
Flour

Eggs
3 tbsp
Oil
1 tsp
Salt
250 mL
Milk
Nutmeg
Pepper

Cheese

150 g
Gruyère cheese, grated
150 g
Emmental cheese, grated

Garnitur

Onion, medium size
Butter

15 min at 220 °C Ober-/Unterhitze

Instructions

  1. Whisk the eggs with the milk. Then add the salt, flour and oil and mix to form a dough. Check the consistency and add more flour if necessary. Season with nutmeg and pepper.
  2. Bring salted water to the boil in a pan. Preheat the oven to 200°C fan.
  3. Scrape the spaetzle dough into the water in several batches on a wet wooden board. Wait until the spaetzle rises and then rinse in a bowl of cold water.
  4. Meanwhile, caramelize the onion half rings in butter over a medium heat. Stir constantly.
  5. Place the rinsed spaetzle and cheese in alternating layers in a baking dish.
  6. When all the spaetzle have been cooked, bake in the oven for 15 minutes until the cheese has melted.
