Beef goulash

An Austrian-Hungarian classic with bread dumplings. Made here the Austrian way. Hungarians would probably call this stew-like consistency Pörkölt rather than goulash. The Eastern Hungarian version of goulash is more of a soup.

Goulash meat, beef
750 g
Onion, cut into strips

Garlic clove
50 g
Butter
1 tbsp
Sweet paprika
1/4 tsp
Caraway seeds
1/4 tsp
Majoran, trocken
1 tbsp
Vinegar
1 tbsp
Starch

Instructions

  1. Cut the onion into thin half rings and fry in butter until light yellow. A wide pan is recommended.
  2. Stir in the paprika, chopped garlic, marjoram and caraway seeds.
  3. Fry the diced meat briefly on all sides in a separate pan and season with salt.
  4. Add the meat to the onions, cover with a little hot water and stew gently.
  5. Simmer for approx. 2 hours and top up with water if necessary.
  6. Finally, pour in plenty of water and add the vinegar.
  7. For a particularly succulent sauce, add a spoonful of starch here.
  8. Serve with Bread dumplings
