Anna's plum mousse

Almost like a jam, the light notes of cinnamon give it a particularly good flavour. Goes very well as a Buchtel filling or simply on bread with butter.

Adjust Amount:

Ingredients

3/4 kg
Plums, pitted
125 g
Sugar
1 tsp
Cinnamon

Cooking:

1 h

On the Plate:

3.5 h

Instructions

  1. Pit and quarter the plums.
  2. Mix with the remaining ingredients in a pan and leave to rest for 2 hours with the lid on.
  3. Reduce the amount for 3⁄4 hour on a medium heat with the lid on. Stir gently every 15 minutes or so.
  4. Leave to reduce for a further 15 minutes without the lid.
  5. Optional: puree the whole thing. (not recommended)
  6. Store in boiled jars. Consume quickly after opening, as the lower sugar content unfortunately leads to easier rotting.
