Alpine maccaroni

This Swiss classic is probably the best meal after a long day of skiing. The side dish of apple sauce is a must.

Instructions

  1. Fry the diced bacon in a large pan or deep frying pan.
  2. Cut the onions into half rings and sweat in the same pan.
  3. Peel the potatoes and cut into ~1 cm3.
  4. When the onions are sufficiently cooked, add the potatoes and milk so that everything is covered. Cook for about 10 minutes.
  5. Add approx. 1 liter of milk. For the next step, we want to add the macaroni. To prevent it from becoming too mushy, add the milk first and bring to the boil.
  6. When the pot is boiling again, add the macaroni.
  7. Grate the cheese or cut into small cubes.
  8. Add the cheese a minute or two before the pasta is cooked through and allow to melt.
  9. Season with salt and nutmeg to taste.
  10. Remove the pan from the heat a little too early and leave to cool a little.
  11. Serve with applesauce or apple compote.

You can make the dish even more decadent by using some cream instead of milk. You can also put the whole thing in a casserole dish and bake a crust in the oven
