- Beat the butter with the vanilla sugar, salt and icing sugar until well combined.
- Add the flour and nuts and mix into a cohesive mass. Do not knead.
- Leave the dough to rest for approx. 10 minutes.
- Divide into four and roll out into approx. 1.5 cm thick rolls. Divide into 5-6 cm long pieces and taper the ends. Shape into a crescent and place on a baking tray.
- Chill for approx. 15 minutes so that the croissants keep their shape in the oven.
- Bake at 180°C top/bottom heat on the middle shelf for 12 minutes or until golden brown.
- Roll the croissants in the icing sugar/vanilla sugar mixture
