Instructions

  1. Roughly chop the courgettes and cook in a pan with the stock for 25 minutes. If necessary, top up with water until the whole courgette is covered.
  2. Puree the soup, add the cream and bring to the boil again. Use enough cream to make a creamy soup.
  3. Season with salt and pepper to taste.
  4. Serve with optional crème fraîche and fresh parsley.
