- Roughly chop the courgettes and cook in a pan with the stock for 25 minutes. If necessary, top up with water until the whole courgette is covered.
- Puree the soup, add the cream and bring to the boil again. Use enough cream to make a creamy soup.
- Season with salt and pepper to taste.
- Serve with optional crème fraîche and fresh parsley.
