Bread dumplings

Bread rolls of 80 g wet weight or approx. 60 g dry weight
50 g
Butter
2
Eggs
1 tbsp
Salt
200 mL
Milk

Onion, medium size
50 g
breadcrumbs
Parsley, smooth

Instructions

  1. If rolls are not yet dry: Cut into 0.5 cm thick slices and bake in the oven until dry.
  2. Whisk the eggs, salt and milk and pour over the rolls.
  3. Finely chop the onions and parsley and sauté in the butter. Then add to the bread rolls.
  4. Stir in the breadcrumbs.
  5. Leave to rest for at least half an hour.
  6. Depending on taste, knead more or less firmly until the desired consistency is achieved. If too firm: more fat, too liquid: Flour or breadcrumbs.
  7. Place in boiling salted water and leave to stand for 10 to 15 minutes. Alternatively, steam for the same amount of time to achieve a slightly drier consistency.
