Preparation:

- Mix the almonds, sugar, flour, cloves and cinnamon.
- Beat the egg whites until stiff with a pinch of salt.
- Melt the chocolate in a bain-marie and stir from time to time.
- Fold the stiff egg whites into the dry mixture and then mix with the melted chocolate and rum.
- Roll out to a thickness of 10 mm, sprinkle with additional granulated sugar to prevent sticking.
- Cut out the biscuits and leave to dry for 6 hours at room temperature.
- Bake for 4 minutes in an oven preheated to 240°C top/bottom heat on the middle shelf.
