Ingredients

250 g
ground almonds, with shell
200 g
Sugar
2 tbsp
Flour
1 tsp
Cinnamon rolls

Cloves, ground

Dark chocolate, min. 70% cocoa

4 min at 240 °C Top/bottom heat

Instructions

  1. Mix the almonds, sugar, flour, cloves and cinnamon.
  2. Beat the egg whites until stiff with a pinch of salt.
  3. Melt the chocolate in a bain-marie and stir from time to time.
  4. Fold the stiff egg whites into the dry mixture and then mix with the melted chocolate and rum.
  5. Roll out to a thickness of 10 mm, sprinkle with additional granulated sugar to prevent sticking.
  6. Cut out the biscuits and leave to dry for 6 hours at room temperature.
  7. Bake for 4 minutes in an oven preheated to 240°C top/bottom heat on the middle shelf.
