Wild garliccheesespaetzle
A Swabian classic spiced up a little for spring.

Wild garlic
Kässpätzle

Gruyère, grated

Emmental cheese, grated

Onion, medium size

Instructions
- Wash and finely chop the wild garlic. Add to the dough in the following steps and proceed as for Kässpätzle.

- Meanwhile, caramelise the onion half rings in butter over a medium heat. Stir constantly.
- Place the spaetzle and cheese in alternating layers in a baking tin.
- When all the spaetzle have been cooked, leave the baking tin in the oven for 15 minutes until the cheese has melted.
